CHIPOLTE BEANS


Ingredients:

  • 1 Small Package Pinto or Anasazi Beans (about 2 cups dry)
  • 3 Dry Chipolte Peppers
  • 6 Cups Water
  • 1-1/2 Tablespoon Spike
  • Salt (to taste)

    Directions:
    Soak beans overnight. Rinse beans thoroughly. Start the beans simmering in the water. Add the chipolte peppers and spike. Turn up heat until boiling. Reduce heat and cover. Let cook for about 45 minutes or until beans are tender. Remove the chipolte peppers before serving
