ROASTED VEGETABLES


Ingredients:

  • 3 Ears of Corn
  • 1 Large Onion
  • 2 Anaheim or Poblano Peppers
  • 2 Red Bell Peppers
  • 6-8 Red Potatoes
  • 1/4 Cup Olive Oil
  • 3 Cloves Garlic (minced)
  • 3 Teaspoons Lemon Pepper Seasoning (or favorite seansoning Lawry's, etc)
  • Salt (to taste)
  • Teaspoon Crushed Pepper (optional, if heat preferred)

    Directions: Chop the vegetables into bite size pieces. Add the seasoning and minced garlic to the olive oil. Pour over vegetables in a pan and stir them until well coated. Place in 375 oven for 30 minutes or until skin is brown. Turn veggies to cook evenly.
